It would depend on the restaurant, their flexibility and ability and willingness to serve it Same goes with Chop Suey andChow main, which are not cosidered Chinese dishes and very few serve them

You want white rice that has been fried but without eggs or vegetables, do I have that right? You do want the oils, spices and meat(s), just not the eggs and vegetables. I don’t see why they couldn’t do it, but you’ll probably have to wait a bit longer for it. Some places use the eggs to bind the rice together, so the texture may be different, too.

I’d just call ahead to whatever restaurant and make sure they are willing to do it and that they understand what you’re asking for.

If they make each meal to order, I don't see why not. Usually, though, a Chinese restaurant makes a lot of the entrees and sides up in a batch ahead of time. In that case, it would be up to the individual restaurant and/or cook as to whether they would do a special order like that.

They're going to use vegetable oil to fry your rice. What's the deal. Usually the amount of egg and vegetables is so minimal you can't see it anyway.

So you want vegetarian fried rice with no vegetables? OK – but all that is, is white rice with soy sauce and/or fish sauce added plus a little oil.

I can’t imagine any place saying no to that.

well if you want that, it wouldn’t be fried rice. It would be plain white rice, and usually they don’t make fried rice to order. It’s usually prepared already. Also it would taste any different if they just fried the plain rice, unless you add seasoning to it.

It depends on the individual restaurant. Some places are more insistent on following their recipes and are less likely to make exceptions. Others may care more about customer satisfaction and be more willing to do what you ask. The only way to really know is to ask about it when you order.
