How do I roast a bulb of garlic to be had with oil and bread… via some italian restaurants?

Easy!

Cut off top portion of bulb (like 1/2 inch) so that you can see the individual cloves of garlic, but they are still held together. Place bulb on a sheet of foil & drizzle with about 2 tablespoons of olive oil. Wrap bulb loosely up in the foil & bake for 40 minutes at 325 degrees, no warmer.

After 40 minutes, check "doneness" with the tip of a knife, should be soft, but not withered.

  1. Preheat the oven to 400°F.

    Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact. Using a knife, cut off 1/4 to a 1/2 inch of the top of cloves, exposing the individual cloves of garlic.

    Place the garlic heads in a baking pan; muffin pans work well for this purpose. Drizzle a couple teaspoons of olive oil over each head, using your fingers to make sure the garlic head is well coated. Cover with aluminum foil. Bake at 400°F for 30-35 minutes, or until the cloves feel soft when pressed.

    Allow the garlic to cool enough so you can touch it without burning yourself. Use a small small knife cut the skin slightly around each clove. Use a cocktail fork or your fingers to pull or squeeze the roasted garlic cloves out of their skins.

    Eat as is or mash with a fork and use for cooking. Can be spread over warm French bread, mixed with sour cream for a topping for baked potatoes, or mixed in with Parmesan and pasta.

  2. Peel outer dry laters, slice off entire top, place on foil, pour oil over the top, close up foil and roast in oven at about 350 for about 35-40 mins. Will be nice and mushy and yummy for spreading!

  4. cut just the top of the whole garlic bulb off
    rub with olive oil. salt and pepper
    wrap very loosely in a tinfoil pouch
    bake 375 for 1 hour
    squeeze from the bottom to remove from skin

    quick method:
    peel garlic
    submerge in oil
    put on stove over very low heat
    cook 20-30 minutes or until garlic is tender

    you can always make a lot and store in an airtight container submerged in oul for months
